The U.S. Alcohol and Tobacco Tax and Trade Bureau defines rum as an alcoholic distillate from fermented sugar cane juice, sugar cane syrup, sugar cane molasses or other sugar cane byproducts that have been distilled at less than 190 proof with the taste, aroma and characteristics generally associated with rum. Under the U.S. definition, rum is bottled at not less than 80 proof.
